EASY SALMON WITH BARBEQUE CHIPS
Ingredients:
2 lbs salmon, skin removed and cut into 2-inch squares
1/4 cup butter, melted
1 12 to 14-oz bottle barbecue sauce
2 5-oz bags of Kettle Brand potato chips, Backyard Barbeque flavor, crushed
Directions:
Preheat oven to 450°F
Line a 9x13-inch baking dish with foil. Pour one bag (5 oz) of crushed potato chips on the foil.
Combine the barbecue sauce and the melted butter (it's okay if the butter isn't all the way melted).
Dip the salmon pieces in the barbecue sauce mixture. Place the salmon on the chips. Pieces will fit tightly next to each other. Cover with the remaining crushed chips.
Cover the pan with foil and bake for 10 minutes. Uncover the pan and bake for additional 15 to 20 minutes, until the fish flakes with a fork.
Let cool for a few minutes before serving.
